Blueberry Muffins

Delicious Blueberry Muffins made with our Kuwl Bread mix. This healthy version is rich in protein and fiber, perfect way to start your day!
Equipment
12 cup (7.0 oz. capacity) Muffin Pan
Ingredients
1 Package Kuwl Bread Mix
4 Eggs
1/3 Cup Coconut or Almond Milk, or milk of choice
3 Tbsp. Oil
1/4 cup Honey
1/2 cup monk fruit sweetener, or brown sugar
1 Tsp. Vanilla
1 Tbsp. Apple Cider Vinegar
Directions
Preheat your oven to 425°F.
Lightly grease the cups of a standard 12-cup muffin pan, or line the cups with papers that have been sprayed with non stick cooking spray.
Mix wet ingredients in medium size bowl, or blend in mixer. Add dry ingredients to wet ingredients. Mix till just blended. Don't over mix.
Fill the muffin cups to three-quarters full.
Bake muffins for 15 to 20 minutes, or until a toothpick inserted into the middle comes out clean.
Remove them from the oven, let rest for 3 minutes then turn them out of the pan onto cooling rack.
